Granola, that back-to-nature mixture of oats, fruits, and nuts, was first hip to the natural foods crowd in the `70s. Today it’s making a comeback at top notch restaurants, hip coffee shops, Five-star hotels and artisan bakeries who tout their upmarket versions stuffed with whole nuts and rich dried fruits.

1 tsp vanilla extract
4 cups rolled oats
2 cups unsweetened coconut
2 cups slivered almonds
1 cup cashews or shelled pistachios
3/4 cup olive oïl
2-3 tablespoons grade-b maple syrup or raw honey (or a combo of both)
2 tsp ground cinnamon
1 tsp salt
2 cups of your favorite dried fruit (dates, cherries, cranberries, raisins) chopped (add only once the granola has cooked and cooled)
Pre-heat the oven to 325 degrees F. Mix the oats, coconut, almonds, cashews, oïl, honey, cinnamon, and salt in a large bowl and stir well making sure that you coat ingredients evenly.
Spread this mixture thinly on a baking sheet covered with parchment paper. Bake until golden brown for 30 minutes. Let cool completely on the baking sheet. Leave to rest.
It is important to only add the dried fruit once the granola is cooked and cooled so that the fruit does not burn. The granola can be stored in an airtight container for up to a month. Use on top of your favorite yogurt or with milk or as a snack. Simple!
